Gatte ki Sabji originated from Rajasthan and gradually its unique taste won the hearts of entire India and now it is being prepared in every house.
We make Gatte ki Sabji with gram flour in which vegetables are not used. Made with curd gravy and a combination of onions and spices using very few spices.
To make this recipe, you do not have to buy anything from outside, all the ingredients are always available in your kitchen. So let us make Gatte Ki Sabzi step by step and that too in a very easy way.
What Is Gatte Ki Sabji ?
Gatte ki Sabji is a popular Rajasthani dish made with gram flour (besan) knead in a dough and then cooked in a spicy and tangy yogurt-based gravy.
The prepared dough, known as “gatte,” are made by kneading gram flour with spices and forming them into cylindrical shapes, which are then boiled and cut into pieces.
These pieces are simmered in a flavorful gravy made with yogurt, spices like turmeric, red chili powder, coriander, and sometimes dried fenugreek leaves (kasuri methi).
It’s a delicious vegetarian dish often served with rice or Indian bread like chapati or roti.

Gatte ki sabji ingredients
For Preparing dough
- Gram flour – 1 cup
- Turmeric powder – 1/2 teaspoon
- Red chilli powder – 1/4 teaspoon
- Coriander powder – 1 teaspoon
- Fennel powder – 1/2 teaspoon
- Salt – 1/2 teaspoon
- Garam masala powder – 1/4 teaspoon
- Ghee – 2 teaspoons
- Curd – 2 spoons
- Baking powder – 1/4 teaspoon
- Refined oil – 1 tablespoon
- Celery – 1/2 teaspoon(ajwaein)
For making gravy
- Mustard oil – 2 tbsp
- Cumin – 1/2 tsp
- Green chillies – 2 to 3 finely chopped
- Ginger garlic paste – 1 tbsp
- Onion – 2 finely chopped
- Turmeric powder – 1/2 tsp
- Kashmiri red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Garam masala powder – 1/2 tsp
- Salt – as per taste
- Chopped coriander – 4 tbsp
For preparing curd mixture
- Curd – 1 bowl
- Turmeric powder – 1/2 tsp
- Kashmiri red chilli powder – 1 tsp
- Coriander powder – 1 tsp
- Roasted cumin powder – 1/2 tsp
Gatte ki Sabzi Rajasthani Style – Steps To Make Gatte Ki Sabji
To make Gatte ki Sabji, first of all we will prepare gatte dough.
We need gram flour(besan) to prepare the dough, so we will take the gram flour in a big vessel.
Also add salt, turmeric, red chili powder, fennel powder, celery, coriander powder, garam masala powder.
Mix everything well.
Now we will add 2 tablespoons of ghee and mix the ghee well in the gram flour mixture.
Press with hands and see if the flour mixture is taking shape, it means our Moyan(tips to make perfect dough) gets perfectly in a gram flour mixture.
Now we will add curd, do not take watery curd, use slightly thick curd and also add baking powder.
Mix everything well and apply the flour mixture using some lukewarm water.
Use water little by little and make soft dough.
Lastly, apply some oil on your hands and grease them.
Next we will apply some oil on our hands and make small balls.
Now keep the balls between the palms and make them long. You don’t have to make it too thick, make it a little thin.
Now we will turn on the gas and pour water in a pan and leave it to boil.
As soon as the water comes to a good boil, we will add the gatte one by one.
If you put the balls in lukewarm water, they will not swell properly.
We will cook the Gatte on medium flame for 7 to 8 minutes.
The identification of whether the Gatte are perfectly cooked or not is that the Gatte start rising and small bubbles appear in the Gatte.
After the gatte are cooked, take them out one by one in a plate and let them cool.
As soon as the gatte cool down, cut them into small pieces with the help of a knife.
Do not cut it too thickly, the gravy will not be absorbed properly into the gatto.
Now take a bowl of curd and beat it well. Curd should not be cold, it should be at room temperature.
We will add turmeric powder, Kashmiri red chilli powder, roasted cumin powder and coriander powder to the curd.
Mix everything well and keep it aside.
Now pour mustard oil in a pan, heat it well and let it cool. By doing this the bitterness of mustard oil goes away.
However, you can use any oil of your choice.
As soon as the oil is slightly hot, we will add cumin seeds and chopped green chillies and also add ginger garlic paste.
Fry everything thoroughly for a few seconds.
Now we will add finely chopped onion and fry well until it turns golden brown.
We will keep the gas flame on medium and we will add spices like turmeric powder, Kashmiri red chilli powder, coriander powder.
Fry the spices for a few minutes and turn off the gas and let the spices cool completely.
As soon as the spices cool down, add the curd that we had kept for whipping, this way your gravy will not curdle.
Keep stirring the curd in the gravy for 1 minute without turning on the gas, then turn on the gas.
Keep the gas flame medium and keep stirring the gravy.
Cover and cook the gravy for 2 minutes.
The gravy starts leaving oil which means the gravy is cooked well.
Now we will add water, we have taken the same water in which the gatte were boiled.
You can add water as per your requirement to make the gravy thick or thin.
Let the gravy boil. As soon as it boils, we will add chopped gattas.
Also add salt and garam masala powder as per taste.
Keep in mind that we also used salt to prepare the dough.
Mix everything and cover the lid and let it cook for 10-15 minutes.
Switch off the gas flame, add chopped coriander and mix.
Cover the lid and serve hot after 10 minutes.
