Traditional chakli recipe step by step
To make chakli recipe, first of all we will prepare chakli flour. To prepare the flour, we first need Poha.
Strain the poha thoroughly with the help of a strainer.
Now we will take half the amount of roasted porridge that we have prepared. Roasted dalia is easily available in the market, if not then you can use roasted gram. Whose peel has been removed. Also add one spoon cumin.
Now put everything in a mixer grinder and make a very fine powder.
If you do not have a measuring cup then take any bowl and measure with it.
We will strain the ground powder and take it in a big plate or vessel.
Now we will take twice the amount of rice flour that we had taken for Poha.
That means if you had taken 1 cup of poha then 2 cups of rice flour would be required.
Mix all three ingredients well.
Now we will put a pan on the gas and we will have to pour twice as much water in the pan as we had prepared for the poha.
Now we will add Kashmiri red chilli powder, turmeric powder, coriander powder, roasted cumin which I had coarsely crushed, asafoetida ,celery and salt as per taste in water.
Will add sesame seeds last. Clean the sesame seeds thoroughly before use.
Now let the water boil well. As soon as it starts boiling, we will add oil, I have taken this refined oil.
As soon as the water starts boiling, slow down the gas flame.
Now add the ingredients we had kept aside for chakli to boiled water little by little and keep stirring.
Now mix it well with the help of a ladle.
Now cover the lid and let the mixture cook for 2 minutes on very low flame.
We will turn off the gas and let it remain covered like this for 2 minutes.
After 2 minutes, take out the chakli mixture in a big plate or vessel.
Now we have to cool the mixture slightly, being careful not to cool it completely.
Now add water little by little and make the tight dough.
Now we will take our chakli maker with which we will prepare chakli.
Now we will take small portions which will fit into the chakli mould.
And mash it and make it smooth with hands.
The better you knead the chakli dough, the more crispy your chakli will be.
Now put the mashed chakli flour in the chakli maker.
And prepare medium sized chakli.
With the help of your hands, keep rotating the chakli as big as you want.
Keep making all the chakli and turn the plate and keep it on the upper part.
When all the chakli are made, put a deep pan on the gas.
Add oil for frying and let it heat well.
When the oil is slightly hotter than medium, add the chaklis one by one.
The gas flame should be slightly above medium.
Do not touch the chakli at all in the oil for the first minute otherwise it may break.
After 1 minute, turn it with the help of a ladle.
As soon as the chakli starts getting a light golden color, it means that the chakli has been cooked well.
If you want, you can also check by taking out a chakli.
Prepare the rest of the chakli in the same manner.
And after it cools down, store it in an air tight container.
