  • Kashmiri chili – 1 tsp
  • Coriander powder – 2 tsp
  • Golden fried onions – 2
  • Ginger garlic paste – 3 tbsp
  • Curd – 1 cup
  • Coriander leaves
  • Mint leaves
  • Oil – 1 cup

To cook rice

  • Water – 3-4 liters
  • Bay leaf – 2 -3
  • Cinnamon 1- 3
  • Cardamom – 3-4
  • Cloves 3-4
  • Green chili – 4-5
  • Lemon juice – 1 tsp
  • Oil – 1 tbsp
  • Salt – 3 tbsp
  • Sela rice Or Biryani Rice – 4-5 cups
  • Food Color
  • Kewra Water
  • Coriander Leaves
  • Mint Leaves
  • Golden Fried Onion

Steps to make mutton biryani recipe

To make Biryani, first of all we will wash the rice well and soak it for 2 hours.

Now we will prepare the masala of Biryani. To prepare Biryani masala, we have to take fennel, cumin, black pepper, green cardamom, black cardamom, cinnamon stick, star anise, nutmeg, mace, clove.

Put all these standing spices in a mixer jar and make a fine powder and keep it aside in a plate.

Now in the same grinder add green chillies and add some water along with it and make a paste.

Now wash the mutton pieces well and keep them in a bowl.

Now we will marinate the mutton. For marinating, we have to take all powdered spices like turmeric powder, salt, chilli powder, garam masala, kashmiri chilli powder and coriander powder.

Will add all the spices to the mutton and add ginger garlic paste along with it.

Now we will add curd and add the biryani masala that we had prepared.

If you want, you can leave it overnight for marination. I have kept it here to marinate for 20 minutes.

After 20 minutes put a cooker on the gas.

And together will add 1 cup of oil. Now cook on high flame for 4 minutes.

After 4 minutes the gravy will start to boil, at this stage add 3 to 4 tablespoons of water.

Do not add much water as the curd already contains water.

Now cover the cooker and cook on high flame till 1 whistle.

As soon as 1 whistle of the cooker comes, slow down the gas flame and let it cook for about 10 minutes.

After 10 minutes, turn off the gas and let the pressure open on its own.

When you open the cooker lid, you will see that the oil has come up.

Now take out about 1/4 cup of oil from the cooker.This oil has a spice test which we will use while layering the rice.

Now turn on the gas again and whatever water is left in the cooker, after cooking the mutton, cook it on high flame and make it thick gravy.

Take a large cooking pot, add water generously into it.

As soon as the water becomes hot, we will add bay leaves, cinnamon, cardamom and cloves.

Will add 1 tbsp oil and juice of half a lemon along with it.

Now we will add 3 tbsp salt and 5 to 6 whole green chilies in the water.

Now we will let the water boil.

Now filter the water of the rice that we had soaked already for 2 hours. As soon as the water comes to a boil, we will add the soaked rice.

Here I had taken Sela rice, so I had soaked it for 2 hours. If you are taking normal basmati rice, soak it for half an hour.

Now cook the rice for 5 to 6 minutes on high flame.

Cook the rice until it is ¾ done / 70% done.

Now take out 1 bowl of water from the boiled rice and keep it.

Now we will do the layering of Mutton Biryani. Turn off the gas flame while layering.

Take a large cooking utensil and put some of the oil we took out from cooked mutton.

Divide the cooked rice into 3 parts and spread the first part of cooked rice in the bottom of the utensil.

Steps to make biryani:

First wash the mutton thoroughly in water.

Now put a cooker on the gas. Put the meat in the cooker along with 2 glasses of water and 1 teaspoon of salt.
