Gond, also known as edible gum in English or Babool gum, is a natural resin that is extracted from the bark of various species of Acacia trees. It is commonly used as a thickening agent, stabilizer and emulsifier in food and beverage products. Gum has been used in Ayurveda for centuries.
In Indian cuisine, gond is often used to make sweets such as ladoo and chikki, and is also added to milk-based drinks such as thandai. Gond has been believed for centuries to have many health benefits, including aiding digestion and providing energy, and has been used in traditional Ayurvedic medicine for a variety of purposes.

Ingredients for making gond laddu
- Almonds – 150gm
- Desiccated coconut – 100 gm
- Melon seeds – 2 – 3 tbsp
- Poppy seeds – 2 tbsp
- Cardamom – 8 pieces
- Gram flour – 1 tbsp
- Wheat flour – 2 cup
- Granulated sugar – 2 cup
- Ghee – 1 – 1/2 cup
- Edible Gum – 100 gm
Step by step method of making gond laddoos
To make gond laddoos, first of all put the gond in a mortar and crush it into small pieces. Keep in mind that you do not have to grind it, just crush it into small pieces so that when we fry the gond, it gets cooked from inside.
Now take a deep fry pan or wok and put it on the gas and pour half a cup of ghee in the wok. Let the ghee heat up well.
Add one piece of gond. If the gond comes up gradually and puffs up, the oil is ready to fry the gond.
Put the gas flame on medium high and add a little bit of gond and fry till it puffs well.
In case the gond comes up quickly, then the oil is very hot. Reduce the heat so that the oil temperature reduces a bit.
You have to take care that the ghee is neither too hot nor too cold. As soon as a slight smoke starts coming in the ghee, only then you have to fry the gond little by little. And with the help of a strainer, keep it in a separate plate.
Now roast the almonds in the ghee that is left in the pan. After roasting almonds, cool them and grind them coarsely or run them in a mixer and grind them coarsely.
Now we will also lightly roast the melon seeds in the same pan.We have not used extra ghee on this,we have fried everything with the ghee that was left in the pan after frying the gond.
If you want to use minimum ghee, then you can roast like this by doing medium flame. As soon as the melon seeds are fried, we will add poppy seeds and cook them as well.
You do not have to roast the melon seeds and poppy seeds for a long time, just roast them till there is a slight color change.
Now take a separate pan and put half a cup of ghee in it. If you want, you can use the same pan to wipe it.
As soon as the ghee becomes slightly hot, you first add gram flour and fry it on medium flame for 1 minute.
As soon as the gram flour is roasted, add wheat flour and roast till it becomes light golden brown.
After pouring the flour, you have to keep in mind that you keep stirring the flour evenly with the help of a ladle so that the flour does not burn at all. You have to roast the flour on a medium to low flame.
While roasting the flour, keep pouring little by little whatever ghee is left in between and roast it while stirring continuously.
It may take you 20 to 30 minutes to roast the flour. Don’t be in a hurry, the better you roast the flour, the better the taste of the laddoos will be.
When your flour becomes light golden brown, then you add coconut powder and crushed almonds and crushed cardamom and fry them with flour for 1 minute.
Now turn off the gas, but still do not keep stirring the flour, the flour may burn due to the heat of the pan.
Now take out the flour mixture in a bowl and let it cool slightly.
Till then take gum in a big plate or dish and flatten it with the help of a rolling pin or bowl.
When your flour mixture cools down to 50%, then pour the flour mixture in the same pan and mix it well.
Add melon seeds and poppy seeds together and mix, now add sugar in the end and mix everything.
And with the help of both hands make laddoos.
Your gum laddoos are absolutely ready.
