Ingredients for making rajasthani bati
- Wheat flour 4 cups
- Rawa 1/2 cup
- Baking Soda 1/2 TSP
- Ajwain 1 TSP
- Salt as per taste
- Ghee 4-5 TBSP (for kneading the dough)
- Water 1.5 cup
- Ghee as required (melted to dip the bati)

Steps to make bati in appe pan
To make Bati, firstly, in a big bowl take wheat flour, semolina, salt to taste and baking powder.
Mix everything well. Now we will apply Moyan in the dough.To apply Moyan, put 4 to 5 tablespoons of ghee (clarified butter)in the flour. You can put oil instead of ghee.
Mix well and check whether the Moyan is properly applied or not, for that press the flour mixture with the fist, if it is holding the shape it means the Moyan has been applied properly.
Now add water as required and knead the dough. Using your hands, knead a very stiff dough with warm water.
Now take a small ball sized dough and roll it round. And with the help of hands, make it like a basket, then fold it from all sides and give it the shape of a round bati.
This helps in uniform cooking of bati on the appe pan. Now keep the appe pan on the gas on low flame.
With the help of a brush apply a few drops of ghee to the appe pan.
Place the rolled bati in each mould.
Now cover the lid and cook on low flame for 15 minutes.
Open the lid and flip the baati and cover from the other side as well and cook for another 15 minutes.
After flipping the bati, apply a little ghee on top of the bati, this will make the bati get roasted well.
Roast the bati well by turning it. If you want, you can take out a one bati and check whether the bati is cooked or not.
If needed, you can bake for a while. Now the baati is cooked from all the sides as well as inside.
Baati is ready. If you don’t care much about calories, you can soak the bati in ghee for 5 minutes to soften it further. Then take it out and use it.
Steps to make bati in the oven
To make batis in the oven, first set the oven at 180 degrees for 20 minutes and place the tray containing the batis in it.
After 5 minutes, when the oven is preheated, open the oven and place the bati on the tray.
Let it cook for 10 minutes and then turn it over.
This will cook the baati from both the sides.
After 10-12 minutes of turning the baati we will take it out of the oven.
Method of making bati in cooker
To make bati in the cooker, you will take a cooker and put salt in it.
After adding salt, put a steel or iron stand over the salt and remove the whistle of the cooker.
When the salt becomes hot, you will place the bati in a plate and place the bati on the stand and cover it.
We have to cook the Baati in the cooker for 20 minutes.
When 10 minutes have passed for the bati to be cooked, then we open the cooker and turn the bati over.
This will cook the baati from both the top and bottom sides.
After 10 minutes of turning the bati, you take it out of the cooker.
Method of making bati in a pan
To make bati in a pan, we will take a pan and put one spoon of ghee in it.
When the ghee becomes hot, then we will put the bati in it.
After placing the bati, we will cover the pan.
After 10 minutes we will turn the baati with tongs.
After flipping, we will cook it for 10 minutes and later we will put 1 more spoon of ghee on top of the baati.
If the baati remains raw from the edges, then you can cook it by standing it with the help of tongs.

Rajasthani Dal Recipe Step By Step
First of all, wash all the lentils well and keep them soaked half an hour before cooking.
Now turn on the gas and put the cooker on the gas.
Now put the soaked dal in the cooker.
Add turmeric and salt as per taste. Add 1 tsp ghee and 3 cups water in it.
Pressure cook for 4 whistles.
Now heat 2 tsp ghee in a large pan and add 1 tsp cumin and a pinch of asafoetida.
Make the gas flame medium and add 1 chopped onion followed by 1 tsp ginger garlic paste and 1 green chili. Fry well.
After frying the onions, further add 1 chopped tomato and fry well.
Additionally add turmeric powder, red chili powder and coriander powder. Fry on low flame.
We have used turmeric earlier also while cooking lentils, so use only a little turmeric.
After roasting all the spices, add the cooked dal.
If the dal seems too thick, then you can also use hot water here to adjust consistency. Simmer for 5 minutes or till the dal mixes well with the spices.
Now add half teaspoon garam masala powder and mix. Turn off the gas flame.
And take a tadka pan, put ghee in it, as soon as the ghee becomes hot, add 2 dry green chilies and add 1 tsp Kashmiri red chili powder and 1 tsp kasoori methi.
Now pour this tempering over the dal. Now add finely chopped coriander leaves and mix well.

First of all, take 4 prepared baatis and break them into small pieces and put them in a mixer jar.
Take the bati without dipping it in ghee and make a thick powder of the bati by running the mixer.
You have to keep in mind that grind the bati coarsely and not very finely.
Now take out the powder in a bowl.
Now add 3 tbsp powdered sugar, 2 tbsp chopped almonds-cashews and 1/2 tsp cardamom powder to the baati churma. Mix well.
Now add 1 tbsp ghee to the bati mixture. Mix everything well.
Now you can add more 1 tbsp ghee to the bati mixture. Mix everything well.
